Skillet Style Buttermilk Biscuits

Skillet Style Buttermilk Biscuits:

2 cups self-rising flour, plus extra for dusting
1/4 cup Shortening
2/3 cup buttermilk, plus additional as needed
4 tbsp unsalted butter, melted

Preheat oven to 450 degrees and place a 10 1/2-inch cast iron skillet (or larger) in the oven to heat up. 

Add the flour and shortening into a large bowl. Use your hands or pastry cutter to break up up the shortening into crumbs. 

Slowly pour in the buttermilk, then mix with your hands until the mixture starts to form dough. If dough feels dry, add a touch more buttermilk. 

Once the dough comes together, place on a floured surface and press the dough into a square. 

Continue to fold dough into itself over and over. This will create the layers! Use additional flour if needed to prevent dough from sticking.

Shape dough into a 1/2-inch thick rectangle. Using a 2 or 3-inch biscuit cutter, cut out biscuits, repurposing the scraps in an effort to use up all of the dough.

After the skillet has been in the oven for about 5 minutes, take out the skillet and add 2 tbsp of melted butter. Place the biscuits into the skillet and lightly brush the tops with an additional 2 tbsp of melted butter. 

Bake biscuits until lightly golden brown, approximately 12-15 minutes, depending on your oven. Enjoy!
